Does Morghur the Beast character suffer from the Unruly that his rules say his entire army is subject to ? IE are the rules for that meant to include HIM as well ? I thought not ...as it would be weird having Unruly Movements + Morghurs own random movement value each turn - etc. Plus it doesn't make a lot of sense that something that is Unbreakable, can also be "Unruly" like that.

** taking this further...would it mean the Spawn he creates also have to roll from Unruly after they come onto the table (in future turns) too ? * * *

Yes and yes.
Note that this only limits the direction they go to. Both still move 2D6.

So the compulsory / random movement for the Spawn and Morghur takes precedence over either of them failing an Unruly test ? What's the point of them being Unruly then ? (just having to go at the enemy ?)
