Title pretty much says it all: what do you think the best high elf death star is?

1,000 pheonix guard.

Silly, fluff says that there are 10,000 Pheonix Guard, so why would you stop at 1,000? :)

I like the large Dragon Prince unit with mounted Prince, and BSB with Battle Banner.

I agree with large amount of White Lions with Caradryan + a BSB with Battlebanner and lion banner.

Caradyran causes fear and magic resist 3. Also has 3 str 5 flaming attacks which do d3 wounds and he has his 4+ ward. Plus he is leadership 9

White lions can take the shooting with there 3+ save and they are also stubborn with str6 and with the lion banner immune to fear/terror

Bsb with great weapon and battle banner not only adds another 3 str 6 attacks, but also his reroll incase the stubborn fails and then also the battle banner roll for combat res.

Use Caradryan to accept challanges (cause if he does die he gets to do d6 wounds with no save)

Probably take 22 white lions (4 rows of 6 with Caradyran and Bsb added in)

ruby cheeseball???

Well I made a white lion unit of 40 with caradryan and a bsb with battle banner. And I also tried with a mage with loremaster's cloak. Pretty tough for them to die.

Sorry. There is not such thing.
Back in 4th ed there was a BROKEN item called the ruby chalice, and it was locally known as the Ruby Cheeseball.
Bad Joke.

The - hit item when you'd suffered a wound, right?

Yup. -2 to hit from long range -1 to hit from short range. Once your unit suffered any type of wound.
Back then it was pretty much a staple for any deathstar unit.
