There's not many true deathstars in the game, since superior durability is one of the major selling points of the tactic. Otherwise it's just a stupidly expensive unit :(

Mostly it's nob bikers with all different wargear and a warboss to lead them. I think this is the only "deathstar" in 40k that's actually worth it.
But I suppose TH/SS terminators with Vulkan, big bike councils or a bike/SS SM command squad with apothecary would come fairly close as well.

One of the more ridiculous variations I've seen is the 30+ (or so, can't remember exactly) model Seer Council, which was possible with some old eldar codex. This one is ofcourse a lot more than 600 points :D

I forget how much Abaddon's The Planetkiller costs in BFG, but it's probably the best deathstar about, given the restriction (and I'm sure it's ~600pts). The Activated Blackstone would certainly do, but it's 750pts!

Oh, you mean in 40k. Damn. :p But those are things which easily do the job of Death Stars...!

10 Warlock Jetbikes with Two Farseer Jetbikes scattering assortment of psychic powers and warlock powers makes for around 600 points a purely lethal unit.

plague ogryns: high toughness, lots of wounds, attacks that wound everything on a 2, from the humble gretchin to the mighty bloodthirster and all for the same price as the much hated chaos spawn

how many pts is 5 th ss termines in a lr redeemer? that always annoys the hell out of me.

At least 450, and its really not that great. The Redeemer's cannons are rather overrated, not being able to focus on one unit, and being so closed range the enemy's meltaguns wouldnt even have to move to be within the killzone (He would also be pretty dumb not to see it coming and spread his units accordingly). Since the objective of the raider would be letting the termies get out and assault, you never need to be that close, and thus you will rarely get to fire the weapon to great effect. That is why you should fear the crusader alot more, as it can deposit its cargo a goodly distance away, still let them get a rough 8 inch assault move (more if shrike is around), and unleash a torrent of suppressive fire. Another problem with this setup is that the TH SS termies are actually liable to being overwhelmed by most CC specialists, and they also are overkill against most normal stuff.

Now five LC termies, Especially Black Templar ones, are very scary. Almost guaranteed to eat up any and all of your units.

Its like 450 ish or something close too it.

Ninja'd. Damn.

Mine that works well is a mob of 7 nobs on foot in a deff rolla wagon led by the warboss, and a pain boy. Load up on big choppas, claws, a couple of boss poles and I've got a unit that mulch's anything short of multiple monstrous creatures. Its only about 400 ish points too. Plenty of room to fit in kill kannon battle wagon, a looted boom gun wagon, 75 boys, and 3 deff koptas. :)

Chaplain, x4 TH/SS Terminators, x2 LC Terminators, LRC with MM. 600pts. Kicks like a mule.

Or Black Templar LC Terminators led by a Marshall with Lightning Claws in a LRC. With Furious Charge.

The vow allows rerolls to miss. The LCs allow rerolls to wound. Furious chargse adds a pip to Str and In.

Nasty, nasty, nasty.

I'm sorry, but when I see the term Deathstar unit, I imagine a unit that can do some damage but ends up being completely destroyed the next turn.

Goff klawstompa (those ones are cheaper...)
Big mek with kustom force field, three grot oilers.
Big mek with three grot oilers.
Meks ride in stompa. Stompa now has a 4+ cover save and two repair rolls per turn, with enough re-rolls to last the whole game. Of course meks can't repair the results unique to the superheavy table, but they'll keep weapons operational and if the thing's fully immobilized they can bring it to full speed. The klawstompa can charge 24", make 7 WS4 S:D attacks, gets bonuses to destroying vehicles and the fabulous vehicle throwing rule, has built-in mega flamethrower, AT missiles and defense shootas, and if the 7 attacks aren't going to be sufficient it gets a bonus to stomp things dead. Not to mention that there would be other orks riding in it and swarming beside it, receiving the handy morale bonus from its aura of awesomeness.
WAAAGH STOMP STOMP RIP.
(if feeling adventurous and if possible, give one mek a vortex grenade, too, but that's dangerous for an assault machine)

Have you watched the same Star Wars we have? :p

Anway, I like the Kahn-mobile:

Kahn on foot
Assault terminators
Dedicated Crusader
I'd add chronos as well, but that'd go over the 600 point mark :( (it's already, but just barely).

Hit and run termintors from beyond the hills! (ie the table edge)

Other than that:
A Gorgon filled to the brink with conscripts from chenkov's platoon? Ie, it's a big thing filled with an infinite amount of poor shots...

How about this

10 x Wraithguard with a conceal spiritseer
Eldrad

Keep the unit fortuned for a T6 unit with 3+/5+ cover with re-roll
Still get the option of any two other psychic powers per turn
10 Wraithcannon can mess up anything
Scoring troop unit too :D
