Say I'm firing a scraplauncher and misfire; the result is a 2 (move 3d6 in a random direction). I roll the scatter die to determine the direction and combined with the 3d6, the result would be off the table. What happens?

You stop at the board edge since you can only go off it during a flee/persue.

Uh nope, check the rules again, you go off the table as if you were pursuing the enemy

what rules indicate that? The misfire says they make a charge of 3d6 in a random direction. nothing i could find in the errata changed the text of the misfire, and as per pg 27 only fleeing and pursuing units can move off the table edge.

In one of the scenarios the sides of the table are treated as impassable terrain, so you would injure yourself :D
