If I gave a demon prince the black mace (appreciate 4) would he still ignore armor saves due to being a MC

Yes, he will still be AP2.

Yes, way smash works overrides Ap of monter weapon ( uless it's Ap1, like awatar sword ). And it's reason why black mace is so broken on Deamon Prince.
