Do individual monsters, such as the Treeman, move like characters/skirmishers (360 arc LOS and movement) or do they move like rank-and-file units (90 arc LOS, etc.). And what about characters riding monsters?

they move exactly like if they were units...except with less models :p
This means they have LOS of 90Žand can be march-blocked.

What about flying monsters?

EDIT: Also, do fast cav get to move at double their movment rate all the time (like skirmishers) or do they march like other units (but still get to maneuver)?

As noted:

Monsters move as single models (like characters on foot), except that they do not have the "single man-sized model on foot" benefit such as always being able to march, 360 degree arc of sight, -1 to hit for being single model...

Flying monsters move as flyers. I can't really be more specific without quoting the entire rules section, so I can only advise you to look it up.

Fast cavalry make march moves and suffer the same restrictions as "everybody" else.
