Currently, just the Wood Elves, soon to be Tomb Kings..
Previously...
Orcs
Goblins
Night Goblins
Skaven
high Elves
Empire
Empire again
Dogs of War
Dwarves
Dark Elves
Bretonnia
Daemons
Warriors of Chaos
All to at least 2K...
I have:
10K High Elves
3.5K Wood Elves
~3K Chaos (4th edition... so completely invalid now!)
~2K Dwarfs
~1K Lizardmen
High Elves are used for by far the largest number of my games, with Wood Elves coming in second. I stopped playing Chaos back in 4th edition, so what I have is probably way too small for a proper army these days. Same goes for my Dwarfs. While I remember having a few 3K games with my Lizardmen in 5th, I'm sure that army is also tiny by post-5th edition standards (hence the measly 1K estimate).
To honest, although collecting one army up to 10K is utterly pointless, I still keep buying more OOP models to fill out the ranks for some reason. In fact, it's the only army I buy any models for.
It has been brought to my attention that there is also a character called enyos in Buffy the Vampire slayer. Note that my username predates him by several years, not the other way around

4 armies:
Vampire Counts
Dark Elves
Wood Elves
Empire
VC and DEs are the largest, at least 6k (and probably more in case of DEs), and are completely painted. Empire is my current project, 2.5k painted, and quite a few models eagerly waiting assembly. Wood Elves is around 3k, with not much painted. I will be picking those up as my side painting project soon.

My house is a bit full...
5k Ogres
7k Empire
4k Dwarfs
7k Orcs and Goblins
6k Vampire Counts
5k Dark Elves
5k Warriors of Chaos
6k Deamons of Chaos
4k High Elves
2k Lizardmen
8k Skaven (+6 live ones)
most of them painted, but still many many to do....
And also lots of Tau, Dark Eldar, Space Marines, Imperial Guard, Orks, Inquisition.. and napoleonics and ancients... So I have lots of variety!
I Own 3. It was 4 before, but i decided it was too much for my economy.
Empire: more than 3k. Probably 4,5k
High elves. 3k
Vampire Counts. 1,5k
These are only the armies of WHFB.
Well, only my vc are full painting, and i used...well, about 70 hours. And the army isn´t finist (basement, more basic troops, special choices).
Also, i prefer to start an army project, play with that army (You feel..."happy" if you play the army that you´re painting), and when i loses a lot, or only i start a new project, i change the army i played.
For example, last 3 years (i started WH in 2008) i usually play with O&G (Yeah, in 7º ed!). Now, with the current army book, my battle style is "dead", and i need to buy new miniatures (savage boys, gobbos-lobber, goblin chariots) and model another ones (squigs...). So i prefer to end the project that i start in christmas (VC), play with VC (Before the change the book), and, maybe next year, release my O&G ARMY.
Skavens... i´m buying the miniatures, when i have all (i need 2 HP) i will play with rats. And elves, empire... I use they to play 1k-1,5k in 7 edition, so now, i need new winds.
And dwarfs...well, when i ended skaven, VC, orcs, and buy the 40k basic box (before they change it), well, i will buy more dwarfs.
Also, i have a little pointment of tyranids, but i hate 40k... Well, i don´t hate 40k. Only i prefer fantasy style.
One advice... Buy stuff and make your own minis!!
Money money money...
wbravenboer : You are as close to a goal in the hobby that I have.
I've recently made the effort to reduce the number of fantasy armies i collected by selling a bunch on Ebay. Prior to this month i had an Ogre Kingdoms army, a Daemons army, a High Elf Army, an Empire army, a Beastman army and the start of a Witch Elf army. None of which were fully painted and all but the Daemon army hadn't seen action on the tabletop this year.
So i had a long think about which armies i actually liked and which were just going to stay sat on the shelf. My High Elves for example have sat unpainted since Island of Blood came out, and were bought purely on a whim after sharing that box set with another player on release day.
In the end i whittled it down to just my Daemons of Chaos, of which i have roughly 5k points and they serve double duty as my main 40k army, and my Beastmen as they are a small, starting force that i still want to get painted and add to. The rest have disappeared into cardboard boxes and the anarchy that is the British mail system.

Read about my terrible luck gaming and iffy painting on my blog
I play many different armies, but tend to try to stick to one for a while, at the moment it is Dark Elves/Dark Eldar, a little the same theme
For painting it is nice to switch between armies, dark colors at the moment, but if I want I can paint some nice bright Empire or High Elves.
One of the advantages of having so many, is that when we play at my house (I have a big playing room) people can always use my models, and when someone wants to try a different army it is always within reach.
I forgot I also got lots and lots of Tyranids and also many Forgeworld models, the big monsters, warhammer Forge stuff and Death Korps. Addicted, me?
New addiction has arrived in the form of World of Tanks.. damn...
I got 3 armies now, O (wait cancel that part) & Goblins, Tomb Kings and Empire.
I have got:
Orcs & Goblins
High Elves
Dwarfs
Empire
WoC
DoC
All were originally ~4k points but the High Elves and WoC will need some additional units now to fit into the current edition rules. Cousin just gave me all the old metal big skaven models and characters too, but hardly any units
Got a few Necromunda gangs also but no 40k
Lizardmen and High Elves. Though I haven't used my Lizardmen for many years and almost all models lie broken in a box in my parents' basement. The only army I use nowadays is my High Elves.
Hear now the dirge faint reprised,

vengeance chimes seven times

Trying out various playstyles, painting new and interesting models is what its all about - thats why they keep changing the game afterall, so its new and fresh. So nothing 'unhealthy' about collecting various armies.
Me, I've got 4 armies - one still in early project/collection stage - I've sold off one, and is probably getting rid of an extra, since they all deserve to get a little playtime once in a while![]()
Just started my first fantasy army, at the ripe young age of 29.
Vampire Counts, mainly thanks to Mantic
Years of experimentation brought the goblins no closer to planting a sausage tree...
Halton Wargaming
40k armies - Black Templars, Orks
WHFB Armies - Vampire Counts
KOW Armies - Undead
I've got 3 after a significant downsizing exercise recently....
8k Dark Elves
6k Skaven
3k Ogres
I've also got a 4th edition chaos army which could top 6k easily in its time, but that is now retired and although I can't sell it, it will probably never be used again.....

About 2500 points of Mono Tzeench Warriors of Chaos is my only WFB army.
I have two 40k armies though, and I'm starting Infinity and Bushido. I also have a rather large collection of LotR models, though I hardly have enough of any one faction to make a decent army.
So I guess I prefer to collect across game systems rather than collect multiple armies in one system.
I think my signature covers them, although I have added over time and should update it.
I am happy to see there are several people, like myself, that have invested in several armies. I actually want to sell/trade off a couple to narrow my storage space down.

It's not that I need to win ALL the time, just now and then to keep me baited.
