Small MSU units of gnoblars with trappers are great redirectors/speed bump, as well as lone sabertusks (but be aware that if the cats are cheaper and more mobile, they can panic nearby units when they die, so beware of where you place them)
Man eaters have can be used in several very effective ways (big stubborn unit, small or big scouting block, poisonned snipers, etc ...)
Mournfang cavalry hits like a ton of brick, and having a 2+ armor plus parry is excellent, their only problem is their low Leadership, and the fact that against attacks ignoring armor they are killed as easily as a bull (T4 and 3 wounds).
Having them outside your general and BSB invite panic tests, and having them close to the centre lessen the importance of their mobility slightly
