I think the fluff says that it is only members of the Griffon order that go out and tame Demi-Gryphs.
There's mention of Winter Wolves of Middenheim Knights in the book. Get some Thunderwolves and away you go

The fluff basically says that some orders use other creatures of noble heritage and gives the example of Winter wolves of Middenheim so I'd say work around that
For your Ulricans, stick them on big wolves and just use them as "counts as" Gryphon knights.
These demi gryphons would make excellent mounts for the High Helms, an attempt by KF to make super heavy cavalry where each Knight had to be well over 6ft tall. The other orders often made comment that for every 3 Knights they only have one brain.

If you are going with middenheim, a big worshiper of Ulric, then you could see how well the new space wolf thunderwolf calvery would work with regular human knights on them. Only problem is i could see it getting kind of expensive and im not sure how the wolves will look with regular humans on them.
Thanks for all the replys, I did think of the thunderwolfs, but fear they might be to big, and so I bought the demigryphs, and they du look great, but I need to figur out what to do with the rider ;-)
Just switch the head of the demi gryphs with a random wolfhead (Goblin riding wolfs or the fenrisan wolves for an example) and they should be alot like giant wolves.
Demi-gryph knights are rare, with the Order of the Griffon having the most (two dozen) but some very small orders are compromised entirely of a small number of demi-gryph knights. A couple of names are given, I think one was Ulrican sounding. You could use that or make your own Order, there are zillions of them afterall.

And for somebody making steampunk & engineer inspired force, there is always the possibility of producing a unit of engineers riding clockwork demi-gryphs...
Knights of the White wolves are very influential and a large order, would they need it Boris Toddbringer would likely back up any interest in monsters to kill the beastmen with. In addition these are the guys who go out killing wolves using only primitive weapons to prove their worth, they don't seem like the types that would back down from the challenge to catch a fancy monster.
Just slap their shields on their backs, give them long cavalry hammers to count as halberds and off you go. The Knights of the White Wolves are a mighty and famous order, there is no reason they can't have Demigryphs.

And the Gryphon (or however you want to spell it) is the main heraldic animal of the Empire, and the White Wolves have clout enough to request a small number of the beasts (nevermind tactical prowess enough to find them useful). And if some of the demigryphs would get killed, the warriors of Ulric would strip to the waist, have a pint of something, grab a small axe and go find some more. (It's just how they roll.)

Something in me rebels at the idea of White Wolves riding demigryphs. I mean, the White Wolves are the incarnation of everything Ulrican and northern and independent, and the griffon is the sigil of the Reiklanders and Sigmarites and centralizers. It'd be like Asterix joining a Roman legion... er, or William Wallace fighting for the English (um) - but you get the idea. And one of the orders named as riding demigrpyhs has a Taalite name *sigh*.
The background does suggest that demigryphs will only submit to one given rider and they're not easy to tame, so it seems they're not the sort of things you can borrow.
I don't really like the idea of knights riding giant wolves either (the Winter Wolves have been mentioned; they seem to be a separate order to the White Wolves), but it seems more in character for Ulricans than the demigryph. Of course, it depends where in Middenland you're from. The southerners would probably go out and capture demigryphs for pets just to annoy Middenheim.
While that holds some truth it would both be possible to make them look wilder, less disciplined and more...well northern. For fluff I can't see the Knights of the White Wolves see other orders brag about their demigryphs and how only great warriors can tame them and then quietly accept the fact, a true Ulrican takes that as a challenge and acquires a beast or dies trying.

Or they just say "that's nice, boys, you managed to ride a big chicken. When I were a lad, chickens were normal size and we ate them for dinner, but they were mostly feathers. If you wanted proper a proper dinner, like wolf, you had to trek out and catch it yourself, none of this weapons or armour nonsense. Naked as the day I was born I was, and half the time the wolf would rip me throat out and me balls off before I managed to wrestle it down, and even then there was hardly any meat on it, even on a big wolf, and that's not like the big wolves you get now, proper big wolves these were, and that's if the beastmen didn't catch you along the way. They hadn't put the lifts or the causeways in either so we had to climb back up the Ulricsberg carrying the wolf and give it to our dying mother who'd cook it with none of your fancy southern spices or nonsense, in fact you were lucky if you even got it cooked, most of the time we had to eat it raw and there were eight of us to a bed so even a big wolf didn't go far. Youngsters these days go riding round on their horses and chickens and nonsense and think they have it hard - they've got no idea..." and so on.
Man... all Empire knights such as knight of Panthers, Wolf, Griffon, Lion, etc.... alll ride what???? Freaking horses!
So to me it doesn't matter what knight you put on the griffon because the symbol is just that a symbol.
I've never heard of Knight of the Horses with Horse helm... but all other knights ride horses. If anything... there should be Knightly order call Knight of the Horses. In our real world history... also many knight uses symbols that represent them such as Boar, Dragons, Lion, etc... but they all ride horses.
So put whatever rider you want on the Demigryph and go with it. If Panthers and Lion knights, don't ride giant cats... so white wolf can ride demigryph.

Seeing ultra close ups of there faces shows I might need to do some touch ups and add some shading on there faces but otherwise they came out as I wanted them to.
