The reason I ask is it seems different for grey seers being able to choose a mix of lores where as normally it's one or the other.

The BRB states that you select your lore when you create your list. However, I'd shoot a mail off to the tournament organiser to get confirmation as they may decide to lift this and you don't want to be caught out.

Grey seers can choose from both, or from one. What I've seen done is that if they choose one, they only take from that lore. If they choose both, they have to roll at least 1 spell on each lore (meaning less chance of doubles).
What you do is when writing your list, write down how many spells you are using off of each lore. Then roll as normal before the game.
Fubar is correct Hellstrom, it only says that you need to choose your lore in the main rule book, not how many spells from the lore. In this case its only right that if you choose to draw from both that you roll at least one from each, it seems only just and makes you look less like an ass for doing so. That being said most skaven players I meet are fluffy enough that they only draw from one or the other lore to match the theme of their army, it helps to hang out with people more interested in the fluff of their army rather than the power of their game.
They know both lores you don't need to write anything down in your list.
I'd ask the TO's if I were you. It fully depends on them, the next tournament I attend for example has the rule that the High Elf with Silver Wand has to write down his spells in the armylist and isn't allowed to pick them for each game. So, in my experience, it fully depends on them and not us internet guys.
