Well, you've got a few options, the first, which is probably the most common, is to use converted dragon princes, as they already have a lot of dragon heraldry. Another option would be to use converted brettonians. I've also heard of people using chaos knights for a more chaotic blood knight. Personally I think a combination of brettonian and dragon prince bits might look cool.

Askari has done some really awesome blood knights made from the horses from the chaos knights kit, and the shield, lance/sword , body and head from the Zombie dragon kit. You can see pictures hear. I'll be interested to see what else some people have come up with

Although a little bit smaller scale, the LOTR morgul knights also do a reasonably good stand in for blood knights and are significantly easier on the wallet at a third of the price

Knights of mourn from gamezone minis are awesome for vampire knights, aslong as your not playing in tournaments that only allow GW mins you'll be fine.
You could do what I did and take a bloodletter, replace his sword with a skeleton spear, his head with a ghoul head (requires slight remodelling of the neck) and mount him on a direwolf (requires slight remodelling of the legs). You end up with a rather cool looking strigoi themed bloodknight that cost about a 1/4 of the price of the proper ones (cheaper than dragon princesses). If you are picky about wysiwyg then the lack of armour, barding and shield might be an issue, though everyone I've faced has been too impressed with them to care.

Hands down best blood knight alternative sculpts are Gamezones Mournful Knights. So detailed, beautiful miniatures.

I have heard in the past of a fellow who took a knight from every cavalry unit he could find, painted them up in a matching scheme and called those the warriors his vampire had found and defeated in combat. For example, a Bretonian knight, an Empire knight, a DE Cold One Knight, Saurus cav etc. So long as they have a similar color scheme, it wouldn't look bad I wager.

I'd go with dragon princes. If you can, go on the various bitz sites and try and order some of the parts on the Plastic Blood Dragon amputee seen on the terrorgeist/blood dragon kit. Should reinforce the vampire feel a bit more.
