The artillery piece itself is a vehicle, the crew are normal infantry (typically); work out wether each element of the unit is in cover or not using the rules for its type then, if more than half the models in the unit are in cover, the unit is in cover.
The same principle applies to units containing Monstrous Creatures and regular infantry and any other "combination" unit out there.
