Off the top of my head, the best option I can think of is taking a shadow wizard and 'pit of shades' it. Its only I3, so theres still only a 50/50 chance of it working, but the rest of the lore benefits HE pretty well, so it's not a waste of a wizar either.
Apologies in advance if any of my post appear to have words missing letters, my keyboard is faulty and I refuse to get another one.

4 light mages. Keep them close together and cast Banishment on it for 3d6 S7 hits.
Oh T7 & I3, ah well Pit of Shades might do the work as you said but Banishment spam seems like the best solution so far.

Pit of Shades has a good chance, banishment spam is already used in a lot of HE armies, if yours is among them then that's your best answer.
Okkams on any unit would help cut it up in combat.
As being dependent on magic is baaaaaad (your wizards can blow up, the winds can fail you, the dice can fail you, they can use scrolls etc etc) then a strategy not using magic would just be bolt throwers, the reaver bow, maybe a hero on an eagle with potion of strength. If it's already taken a bolt or a magic missile then the noble would have a decent chance of finishing it off.
I normally use a mix of lores (2-3 lvl.2 & a lvl.1) & so far magic has just disappointed me in 1 game (tried the ''must have'' lvl.4) so I'll just swap lores on my mages. It's reliable enough without shooting!
A horde of White Lions? The soulgrinder base is HUGE, so you may get all your attacks. 31 attacks should cause 6.123 unsaved wounds, or thereabouts.

Agreed with those so far. White Lions or magically buffed spearmen are definitely the way to go.
If you want a gamble-riffic gimmick that may pay off bigtime, consider the following:
Noble, BSB
Foe Bane (wounds models with 2 or more Wounds on their profile on a 2+)
Dragon Armor
Shield
Guardian Phoenix (or Helm of Fortune)
Great Eagle
You should be causing 2-3 Wounds on it thanks to Foe Bane, you have +1W because of the Great Eagle so you're unlikely to get smooshed yourself (and you're no longer infantry), your S4 brings its save to 5+, and you have +2 static CR (+1 additional if you charge, which you will, because you fly with swiftstride). Definitely enough to pop it. If you can find the points by taking something out, put in a Potion of Foolhardiness for +1A on the charge and the thing is definitely done for.
