Sorry it's taken so long to answer your question! I will be resuming construction of my board (well, it really just needs detail painting!) in the next month here - along with pictures and tutorials.
To answer your concerns:
Road tiles can be tricky; I made mine using the mdf boards used for the rest of the table. Instead of sanding it like the rest of the board though, I decided to add minimal texture using a brush and "painting" on a mixture of sand, glue, and water (this mixture should be the consistency of heavy cream). Some of my buddies have used materials like cork for roads too.
My process for rubble was similar to the ones used from an old gw article. Using a meat grinder (you can just use clippers) I take sprues and cut them into little pieces. I then take clay and place it around parts of buildings where I want the rubble to be. Then I stick the cut up sprues and other building pieces in the clay. I then immediately use an old brush and stipple some glue in the crevices to secure the sprues. I add a bit of sand and voila.

A lot of work but it paid off, that's an awesome table.
Oh, how I loved the old cities of death pieces. so much detail, so many options and it made ruins feel like actual ruins in the game.
